Negra Mole in the Amphora

Amphora winemaking is an ancient technique with roots stretching back thousands of years in the Mediterranean. Clay vessels, or amphorae, were historically used to ferment and age wine, allowing gentle oxygen exchange while preserving the grape’s natural aromas and flavours.

Today, some Algarve producers are reviving this method with Negra Mole, using modern hygienic practices while maintaining the traditional approach. Wines aged in amphorae often reveal greater purity, delicate texture, and enhanced freshness, highlighting the grape’s light, aromatic character and its connection to the land.

Negra Mole wines have long accompanied everyday cooking in the Algarve. Their freshness, gentle tannins, and moderate weight make them easy to enjoy with food, especially dishes built around good ingredients, olive oil, and the rhythm of the seasons.

Locally, you’ll often find Negra Mole paired with dishes such as ameijõas à Bulhão Pato, grilled sardines, or carapaus alimados, as well as heartier plates like frango da Guia, espetada de porco preto, and polvo à lagareiro. It also sits naturally alongside cataplana and traditional products like muxama de atum.
